- 1/2 cup onion, quartered and sliced ¼-inch thick
- 1/4 cup green pepper, quartered and sliced ¼-inch thick
- 1 stick celery, cut into ¼-inch slices on the diagonal
- 1/4 cup sliced carrots (optional)
- 1 teaspoon garlic, minced
- Water or broth for sautéing
